Easy Apricot-Thyme Sorbet

Sweet and tart apricot sorbet with a little kick from the thyme. And OH SO refreshing!!

  • 5 cups apricots, halved and pitted (from about 15-20 apricots)
  • 3 tbsp maple syrup
  • 1 tbsp thyme leaves and/or flowers, plus more for topping

Step 1

Freeze the halved and pitted apricots overnight. 


Step 2

Once frozen, remove the apricots from the freezer. Add all ingredients to a blender. Using your tamper, blend until smooth. Either eat immediately or freeze for a firmer texture. Top with more thyme.
