Roasted Pears with Vanilla Syrup and Almond Custard

Cooking fruit is always magical, especially these vanilla-almond roasted pears.

  • 4 pears
  • 2 tbsp maple syrup
  • 3 tbsp vegan butter, divided
  • 1 vanilla pod, beans scraped out (or 1 tsp vanilla extract)
  • 1/8 tsp salt
  • 1 full egg
  • 2 egg yolks
  • 1/3 cup almond flour
  • 1/2 cup almond milk
  • 1 tsp almond extract

Step 1

Preheat the oven to 425F. Halve the pears and add to a roasting dish, cut side down. In a small bowl, mix the maple syrup, 2 tbsp of the vegan butter, the salt and the vanilla pod, beans scraped out (or the vanilla extract.) Whisk until smooth, and pour over the pears. Roast for 30 minutes or until pears are soft but still holding their shape. 


Step 2

While the pears roast, add the full egg and the egg yolks to a medium bowl. Whisk. Add the almond flour and the last 1 tbsp vegan butter to the eggs and mix. Set aside. 


Step 3

Add the almond milk and almond extract to a small pot. Put on a simmer and cook until it just bubbles. Pour almond mixture into the egg bowl and mix. Then pour new mixture back into the pot and turn on low heat. Whisk constantly until it thickens, 2 minutes. Remove from the heat. Add custard to a serving plate. Once the pears are ready, put pears on the plate and top with the syrup the pears left in the roasting dish.
