Strawberry-Hazelnut Mylk

A drink that transports you back to childhood with strawberries, hazelnuts, vanilla and honey.

  • 1 cup hazelnuts
  • 1 tsp vanilla extract
  • 3.5 cups filtered water, plus more for soaking the hazelnuts overnight
  • 1 cup fresh or frozen strawberries, hulled
  • 1 tbsp honey

Step 1

Soak 1 cup of hazelnuts in water for 8 hours or overnight. Rinse thoroughly after soaking, and discard the soaking liquid. 


Step 2

Add the rinsed hazelnuts, vanilla extract and filtered water to a blender. Blend until hazelnut pieces are very, very fine. Run though nut milk bag to create milk. Discard or save pulp to dehydrate for cookies, perhaps! Refrigerate milk if making fruit mixture later. Otherwise, the milk may stay out while you cook the fruit.


Step 2

In a pan add 1 cup of fresh or frozen. (If frozen, defrost first.) Also add the honey. Turn heat to medium/high and mix constantly to avoid burning. Bring to a boil, and then take off the heat. Allow cooked fruit mixture to cool.


Step 3

Once cool, pour fruit mixture in your glasses, half in each.

Lift each glass and swirl around to make a swirl pattern in the glass. Then pour milk into each glass. Serve immediately and enjoy!!

It’s probably best to enjoy that day, but I saved some and it was fine the next day!
