Jade Pearl Rice with Garlic, Vegan Butter, Sherry Vinegar and Sage

I saw this jade rice at the market and had to buy it—because any food with an “interesting color” is, of course, Instagram-worthy. The green color of this rice comes from the infusion of bamboo extract. It’s short-grain, nutty and gorgeous. 


I wanted an elegant preparation to complement the elegant color. Vegan butter and sherry vinegar did the trick—they add wonderful depth of flavor. There was a time when I cooked rice in only water and salt. But recently I embraced the versatility of rice and started cooking it in vegetable broth, vegan butter, various vinegars and the like. This dish went very quickly in our house.

Ingredients

  • 1.5 cups rice
  • 2 garlic cloves, minced
  • 1 tbsp sage, chopped roughly 
  • 1 tsp sherry vinegar (or 2 tsp if you want slightly more acid)
  • 1 tbsp vegan butter at room temperature 
  • 1 tsp salt

Instructions

Step 1

Cook rice in water according to package instructions. When cooked, fluff with a fork. Then add garlic and stir to mix. Add butter, vinegar and sage, and stir. Sprinkle with salt and taste for acid and salt. Serve hot.
