Plum-Honey Lemonade

·

When you have stone fruit and a heatwave, what else is there but stone fruit lemonade? This plum-honey lemonade is beyond delicious, and it's super simple to make! No heating up simple syrup--just 4 ingredients (plus mint for garnish!) that come together for a quick and very refreshing drink!

Stone fruit is, of course, the highlight of summer. Peaches (white, yellow, donut), nectarines (white, yellow, maybe others), cherries (all the colors) and plums. I buy them all until they’re gone. To me, plums have the most striking color that’s just begging to be blended into a refreshing drink. Just begging! So I decided to blend it up with honey, add lemon and water and finish it with a mint garnish—and the result is beyond delicious!

There’s a perfect balance between sweet and tart. You can certainly add the honey and lemon juice in stages, to gauge your level of sweetness and acidity. But I’m personally not a fan of saccharine-sweet or super pucker-y drinks, so I can vouch for the balance in this one!

The necessary tools for this recipe are a blender, sieve, bowl and a few measuring spoons and cups. Enjoy, and leave a comment below if you try it! Or tag me on Instagram if you post it!

Ingredients

  • 3 medium plums, pitted
  • 3 tbsp honey (or sub maple syrup for vegan)
  • 1 cup lemon juice
  • 1.5 cups water
  • mint sprigs to garnish

Instructions

Step 1

Add the pitted plums and honey to a high-speed blender. Mix until smooth. Run the mixture through a sieve over a bowl or pitcher. It will be somewhat thick at this point.

Step 2

Add the lemon juice and stir to mix. Certainly feel free to add 1/2 cup of lemon juice at a time to gauge acidity. Add 1.5 cups of water (or slightly more if you use less than 1 cup of lemon juice). Mix.

Step 3

If you’d like to chill it before serving, keep it in the fridge for 20 minutes or so. Or serve immediately with ice and mint sprigs.
