Easy Apricot-Thyme Sorbet

·

Sweet and tart apricot sorbet with a little kick from the thyme. And OH SO refreshing!! Apricots have entered the spring produce scene, and when I got my hands on some, I immediately thought of freezing them for sorbet. We are visiting my parents’ home for Memorial Day this weekend, and I packed my apricots with me. When we arrived, I saw my mom had picked flowering thyme from her garden—and the sorbet flavor fell into place.

Apricots have an innate sweet and tart flavor. It’s pretty perfectly balanced, in my mind. The thyme adds a little earthy kick. It’s the kind of sorbet you’d want by the pool because it’s not saccharine-sweet. Personally I don’t like uber-sweet daiquiris by the pool, though I know lots of people do. This sorbet is all I need: sweet, tart, earthy and just so delicious.

There are only three ingredients: frozen apricots, maple syrup and thyme. If you use a tamper, you won’t need liquid. I recommend not adding liquid, so that it’s more sorbet than smoothie. The only necessary tool for this recipe is a blender (and its tamper)! Enjoy, and leave a comment below if you try it! Or tag me on Instagram if you post it!
