Raspberry-Coconut Bliss Balls

These really are the perfect mix of tart and sweet. And their pretty color will surely make any plate happy! Just find some raspberry powder, and you’re all set. I use the freeze-dried powder from Northwest Wild Foods. These balls are addictive AND so fun to make. 


All you need for this recipe is a food processor and a plate for the powder. And some patience while they set in the fridge. Enjoy, and leave a comment below if you try them!

Raspberry-Coconut Bliss Balls

Ingredients

  • 1 cup softened + pitted dates, I used 10.5 large dates
  • 1 cup coconut butter
  • 1 cup coconut flour
  • 1/8 tsp salt
  • 1 tsp honey
  • 1/2 tsp vanilla extract
  • Enough raspberry powder to coat balls

Instructions

Step 1

Add all but powder to food processor and pulse until everything is combined. Scoop out roughly 1tbsp at a time and roll mixture in your hands to form a ball. If the balls aren’t coming together, add a bit more honey to help them “stick.” Spread raspberry powder on a plate. Dip each ball in raspberry powder to coat. Once you’ve made all the balls, put them in the fridge for 2 hours to set. Then store in an airtight container in the fridge for up to 5 days.
