Cooking fruit is always magical. The sugars seep out and create a sublime syrup that you pour back on the fruit for a delicious experience. I cooked these roasted pears with vegan butter, maple syrup and vanilla, and paired it with an almond custard. Wonderful complementing flavors, and all dairy-free.
I had about 6 pears in a bowl on my kitchen counter. I’d liked their beautiful red and yellow tones at the market and bought a bunch. Typically I buy things with an intended purpose, but I didn’t know what I would do with these. But I saw them on the counter, preheated the oven and went for it. I knew I had some almond milk, a lone vanilla bean and a few extra eggs, and the rest just came together. The almond milk led me to the almond flour and extract, and now I like almond custard more than vanilla!
This recipe also has very few steps. The custard requires some fast action to prevent burning, but cooking the pears couldn’t be easier. The necessary tools for this recipe are a roasting pan, a whisk and a pot for the custard. Enjoy, and leave a comment below if you try it!

Step 1
Preheat the oven to 425F. Halve the pears and add to a roasting dish, cut side down. In a small bowl, mix the maple syrup, 2 tbsp of the vegan butter, the salt and the vanilla pod, beans scraped out (or the vanilla extract.) Whisk until smooth, and pour over the pears. Roast for 30 minutes or until pears are soft but still holding their shape.
Step 2
While the pears roast, add the full egg and the egg yolks to a medium bowl. Whisk. Add the almond flour and the last 1 tbsp vegan butter to the eggs and mix. Set aside.
Step 3
Add the almond milk and almond extract to a small pot. Put on a simmer and cook until it just bubbles. Pour almond mixture into the egg bowl and mix. Then pour new mixture back into the pot and turn on low heat. Whisk constantly until it thickens, 2 minutes. Remove from the heat. Add custard to a serving plate. Once the pears are ready, put pears on the plate and top with the syrup the pears left in the roasting dish.
