Oh how I love blueberries, and you just don’t see them at center stage enough. Strawberries get so much more attention in ice creams, cakes, tarts, creams—everything. Well this is my second recipe this week with blueberries as the stars. My Blueberry-Ginger Bliss Balls also celebrated these delicious, blue gems.
And nice cream is just that: nice to your schedule (it takes 5 minutes versus hours to make ice cream); nice to your budget (hello, 2 ingredients!); and nice to your dairy-free goals. It’s nice. Just freeze your bananas and blueberries overnight, and grab your high-speed blender and accompanying tamper. And you can have the dreamiest nice cream!

Step 1
Add all ingredients to a high-speed blender. Blend on high, using a tamper as needed to integrate fully. Serve immediately if you'd like a softer texture. If you'd prefer a firmer texture, transfer the nice cream to an airtight container with a cover, and freeze. If you freeze it, let it sit out for 10 minutes before serving.
